Borealis the Freezing Fog is a great boss in Elden Ring.

Borealis the Freezing Fog is an ice dragon that haunts the Freezing Lake in the Mountaintops of the Giants. It wraps its hunting ground in a constant blizzard. Its breath carries freezing magic, and its stomps throw up clouds of frost. The open lake makes Torrent and ranged attacks very effective.

Lore

Borealis is a great dragon with wings in place of forelimbs. It breathes a freezing magical flame and fills the air with icy fog.

The ice dragons were once lords of the mountaintops. The Fire Giants defeated them and chased them from the peak. Borealis is a descendant of the ancient dragons, born without their stone scales.

Phase 2: below 70% health Borealis adds the Glacial Roar.

Attacks

Frost breath: a sweeping stream of freezing magic flame that builds frostbite. Riding out of the cone on Torrent avoids it.
Frost stomps: each stomp releases a cloud of frost. Keeping away from the front legs avoids it.
Roar: a fast roar that hurts everything nearby. An immediate roll or dash avoids it.
Glacial Roar: it folds its wings, roars upward, then roars again and throws up a wide field of ice. Hitting its back during the first roar and then running away avoids the ice.
Bites and wing swipes: close attacks at the front and sides. Staying near the hind legs limits them.

Tactics

Fight during the day, because the blizzard makes visibility poor at night.
Bring Thawfrost Boluses and consider the Stalwart Horn Charm for frost buildup.
Ride Torrent to get in, hit and get out.
Aim for the hind legs and wings instead of staying under its head.
Use strike weapons, because Borealis takes extra damage from strike and shrugs off slash and pierce.
Summon a long-range spirit ash or use bows on its head.
