The Gargoyle is one of the Elementa, a stone statue brought to life by magic. Gargoyles stand guard in abandoned ruins and castles. The first one can be met early in the main story, in the elven ruins of Wandering in the Dark.
Lore
Mages create gargoyles to guard their laboratories and hideouts from intruders. The sight of these horned, winged monsters alone has scared off more than one would-be burglar. Those who stay usually die soon after, torn to shreds by stone claws.
Weaknesses
Coat the silver sword with Elementa Oil and bring Dimeritium Bombs. Quen is the key Sign. The surest approach is to raise the shield, wade in and keep swinging.
A gargoyle sweeps fast with its claws, and a hit that lands turns into a full combo. It also spits poison. It stomps the ground to hit everything nearby, and sometimes it leaps into the air first and comes down in a stomp. Keeping distance offers little safety, because it throws rocks as well.

Gargoyles appear in Wandering in the Dark, an early main quest in Velen. Keira Metz leads the witcher into the elven ruins where an elven mage hides, in the search for Ciri. They also appear in The Tower Outta Nowheres.
