Lore
A shepherd named Sibald "Fang" Faalde put it simply. Many things fall from the sky besides rain and snow. Frogs, for one. And the Cloud Giant.
The Cloud Giant is most likely a magical illusion that has decayed over time. Its fairy-tale land was abandoned and left untended for years. In that time it began to rot, fester and fall apart.
The giant was probably meant to be a friendly strongman. It would carry the duke's young daughters on its shoulders and never grow tired. As the land decayed, the giant grew too big and turned into a dangerous monster.
Then Jack stole its goose, the one that laid golden eggs. Ever since, the giant throws anyone who climbs onto its cloud straight off, without a word of warning.
Behaviour
The giant waits on its cloud, just outside the castle gates, and guards the way in.
Weaknesses
Coat the blade with Ogroid Oil. Fire hurts the giant badly, so Igni and Dancing Star bombs are both strong choices.
The giant likes to jump down into the clouds below the battlefield. It then pops up somewhere else for a surprise attack. Watch it closely. A jump is the signal that it is about to vanish, so dodge the moment it disappears. Its slow movement leaves time to dodge most of its blows.
Lightning strikes the metal cages around the arena during the fight and leaves them charged. Lure the giant into hitting a charged cage. The shock stuns it for a good while, which leaves it open to a long string of heavy hits.

The Cloud Giant is the last foe of Beyond Hill and Dale..., a main quest of Blood and Wine. The quest takes place inside the Land of a Thousand Fables, a fairy-tale illusion. The witcher meets Syanna there, and the two join forces. A Wicked Witch, pixies and wolves are among the dangers on the yellow brick road.
The way out of the illusion lies in the clouds overhead. Reaching it takes three magic beans. Joss, the boy who cried wolf, knows where they are. The red bean is inside the Big Bad Wolf. The yellow bean lies in Longlocks' tower. The blue bean is in the brick house of the Three Little Pigs.
Planted together, the beans grow a beanstalk that reaches the sky. At the top the giant blocks the way to the castle. With the giant dead, the path leads across the bridge to the castle. A well on the far side is the way out of the illusion. The choices made with Syanna during this quest affect how the Blood and Wine story ends.
