You cannot farm anything in Valheim until a Cultivator comes off the Forge, and the Carrot is the first crop that makes the tool worth carrying. You grow it from seeds picked wild on the floor of the Black Forest.

Farming

You grow Carrots by planting Carrot Seeds with the Cultivator.
They take about 2.22-2.78 in-game days to fully grow.
Used in the Spice Rack upgrade for the Cauldron.
Planting and growing a "Seed-carrot" with the Cultivator gives you 3 Carrot Seeds.
You can feed them to hungry Boars to start or continue taming them, or to let them breed.

The Cultivator offers two different plants, and you choose between them when you plant. The carrot plant grows from seeds and gives you carrots to eat. The carrot seed plant grows from a carrot and gives you seeds and nothing else. Neither turns into the other, and an edible plant never produces seeds however long you leave it. The wild carrot plants growing in the world are seed plants, which is why the first thing your farm gets from the wild is a handful of seeds.

How to Get It

Carrots are grown, not found. Pick Carrot Seeds by hand from the wild carrot plants scattered through the Black Forest, then till a patch of Meadows, Black Forest or Plains soil with a Cultivator and space the seeds about a pace apart. The Cultivator needs bronze, so carrots really wait on Eikthyr and a copper mine. Each seed gives three carrots, and the Cultivator's seed carrot option turns a carrot back into three seeds, so one wild patch is enough to keep you supplied for good.
